Amber Lambke, cofounder of Maine Grains, will treat a group of retired University professors to coffee and homemade pumpkin scones made with Maine Grains flour before a tour of the gristmill operation. Maine Grains is a traditional Grist Mill that cleans and processes stone-milled flour, rolled oats, cornmeal, buckwheat, and other organic heritage grains out of a re-purposed county jail house in downtown Skowhegan, founded in 2012. The business serves bakers, brewers, and chefs throughout the northeast. Our pumpkin scone recipe is an adaptation from the Standard Baking Co. “Pastries” cookbook, and incorporates Maine Grains sifted flour as well as whole-grain spelt.
